-
1 tbsp olive oil

1 clove garlic, minced

1/2 cup ricotta cheese
-
1 cup shredded mozzarella cheese
-
1/2 cup grated Parmesan cheese
-
Zest of 1 lemon
-
Juice of 1/2 lemon

1/4 tsp red pepper flakes (optional)
-
Salt and black pepper, to taste
-
Fresh basil leaves, for topping
-
Cornmeal or flour, for dusting the pizza peel/pan
Instructions
-
Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven while it heats.
-
Roll out pizza dough on a floured surface into a 12-inch round. Transfer to a pizza peel or baking sheet dusted with cornmeal or flour.
-
In a small bowl, mix olive oil and minced garlic. Brush over the dough.
-
Dot the pizza with spoonfuls of ricotta, then sprinkle mozzarella and Parmesan evenly over the top.
-
Add lemon zest and a light drizzle of lemon juice over the cheese. Sprinkle with salt, pepper, and red pepper flakes if using.
-
Bake for 10–12 minutes, or until the crust is golden and the cheese is bubbling.
-
Remove from the oven and immediately top with fresh basil. Slice and serve hot!
Notes
-
Add thin slices of zucchini or artichokes for extra veggies.
-
Burrata makes a luxurious swap for ricotta.
-
Great on flatbread or naan for a quick weeknight pizza.
