- 8 oz (227 g) dark chocolate, finely chopped
- 1/3 cup (80 ml) heavy cream
- 2 tbsp amaretto liqueur
- 1/2 tsp almond extract
- Cocoa powder or finely chopped nuts (for coating)
Instructions
- Place the chopped dark chocolate in a heatproof bowl.
- In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the chocolate. Let it sit for 2โ3 minutes to melt the chocolate.
- Add the amaretto liqueur and almond extract. Stir until the mixture is smooth and glossy.
- Cover the bowl and refrigerate the mixture for 2โ3 hours, or until firm enough to scoop.
- Using a small cookie scoop or spoon, scoop the mixture into 1-inch balls and roll them with your hands.
- Coat the truffles in cocoa powder or chopped nuts as desired.
- Store in an airtight container in the refrigerator until ready to serve.
Notes
- These truffles can be made up to a week in advance.
- For a non-alcoholic version, replace amaretto with almond extract (use 1 tsp total almond extract).
- Try mixing coatings like powdered sugar or shredded coconut for variety.
