- 10-12 egg roll wrappers
- 1 egg, beaten (for sealing)

Instructions
- Prepare the Cheesecake Filling:
- In a medium bowl, beat the softened cream cheese until smooth and creamy.
- Add the powdered sugar and vanilla extract; mix until fully combined and smooth.
- Assemble the Egg Rolls:
- Lay an egg roll wrapper on a clean, flat surface with one corner pointing toward you (diamond shape).
- Spoon about 1 tablespoon of the cheesecake filling onto the center of the wrapper.
- Add 1-2 teaspoons of cherry pie filling on top of the cheesecake mixture.
- Fold the bottom corner up over the filling, then fold in the two side corners, and roll the wrapper tightly, similar to rolling a burrito.
- Brush the top corner with beaten egg to seal the egg roll completely.
- Repeat with the remaining wrappers and filling.
- Air Fry the Egg Rolls:
- Preheat your air fryer to 375ยฐF (190ยฐC) for about 3 minutes.
- Lightly spray the egg rolls with cooking spray to help them crisp up.
- Place the egg rolls in a single layer in the air fryer basket, ensuring they are not touching.
- Air fry for 8-10 minutes, turning halfway through, until the egg rolls are golden brown and crispy.
- Serve:
- Once done, remove the egg rolls from the air fryer and let them cool slightly.
- Dust with powdered sugar if desired and serve with extra cherry pie filling for dipping.
