- 1/4 cup grated Parmesan cheese

- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper

Instructions
- Preheat your air fryer to 375ยฐF (190ยฐC) for 3-5 minutes.
- In a shallow bowl, mix the breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
- Brush both sides of the eggplant slices with olive oil.
- Coat each slice in the breadcrumb mixture, pressing gently to help it stick.
- Spray the air fryer basket lightly with cooking spray. Arrange the eggplant slices in a single layer without overlapping.
- Air fry for 8-10 minutes, flipping halfway through, until the eggplant is crispy and golden brown.
- Remove and serve immediately. Repeat with any remaining slices if necessary.
