  • 4 large bell peppers (red, yellow, or green)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 1 pound lean ground beef
  • 1 can (15 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 2 cups cooked rice
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup shredded Colby Jack cheese

Instructions

  1. Prepare the Peppers:
    • Slice the tops off the bell peppers and remove the seeds and membranes.
    • Lightly brush the peppers with olive oil.
    • Preheat the air fryer to 360ยฐF (180ยฐC).
    • Place the peppers in the air fryer basket and cook for 5 minutes to soften them slightly.
  2. Prepare the Filling:
    • In a skillet over medium-high heat, add olive oil and diced onion. Sautรฉ until the onion becomes translucent.
    • Add the ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain any excess fat.
    • Stir in the diced tomatoes, tomato sauce, cooked rice, Italian seasoning, garlic powder, salt, and pepper. Let the mixture simmer for a few minutes to combine the flavors.
  3. Stuff the Peppers:
    • Fill each bell pepper with the beef and rice mixture, pressing down gently to pack the filling.
  4. Cook in Air Fryer:
    • Place the stuffed peppers back into the air fryer basket.
    • Cook at 360ยฐF (180ยฐC) for 10 minutes.
    • Open the air fryer and sprinkle the tops of the peppers with shredded Colby Jack cheese.
    • Cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.

Notes

  • For a different flavor, you can use ground turkey or chicken instead of beef.
