- 4 large bell peppers (red, yellow, or green)
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 pound lean ground beef
- 1 can (15 ounces) diced tomatoes
- 1 can (8 ounces) tomato sauce
- 2 cups cooked rice
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 1 cup shredded Colby Jack cheese
Instructions
- Prepare the Peppers:
- Slice the tops off the bell peppers and remove the seeds and membranes.
- Lightly brush the peppers with olive oil.
- Preheat the air fryer to 360ยฐF (180ยฐC).
- Place the peppers in the air fryer basket and cook for 5 minutes to soften them slightly.
- Prepare the Filling:
- In a skillet over medium-high heat, add olive oil and diced onion. Sautรฉ until the onion becomes translucent.
- Add the ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain any excess fat.
- Stir in the diced tomatoes, tomato sauce, cooked rice, Italian seasoning, garlic powder, salt, and pepper. Let the mixture simmer for a few minutes to combine the flavors.
- Stuff the Peppers:
- Fill each bell pepper with the beef and rice mixture, pressing down gently to pack the filling.
- Cook in Air Fryer:
- Place the stuffed peppers back into the air fryer basket.
- Cook at 360ยฐF (180ยฐC) for 10 minutes.
- Open the air fryer and sprinkle the tops of the peppers with shredded Colby Jack cheese.
- Cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.
Notes
- For a different flavor, you can use ground turkey or chicken instead of beef.
- Feel free to add other vegetables to the filling, such as diced zucchini or mushrooms.
- If you prefer a spicier dish, consider adding red pepper flakes or using pepper jack cheese.
