Ingredients

Units Scale
  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/3 cup shredded coconut (unsweetened)
  • 1/4 cup mini chocolate chips
  • 1/4 cup chopped almonds
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine the rolled oats, almond butter, honey (or maple syrup), shredded coconut, chopped almonds, chocolate chips, vanilla extract, and salt.
  2. Stir the ingredients together until well mixed and a sticky dough forms.
  3. Using your hands or a small cookie scoop, roll the mixture into bite-sized balls (about 1 inch in diameter).
  4. Place the energy bites on a baking sheet lined with parchment paper.
  5. Refrigerate the bites for about 30 minutes to firm up.
  6. Once chilled, transfer to an airtight container and store in the fridge for up to 1 week.

Notes

  • You can substitute almond butter with peanut butter or any other nut butter.
  • For extra sweetness, drizzle melted chocolate over the bites before refrigerating.
  • These bites can be stored in the freezer for up to 3 months.
