Description

This “Amazing Forgotten Chicken” is a classic comfort dish that’s incredibly easy to make. With tender chicken baked in a creamy rice mixture, it’s the perfect set-it-and-forget-it recipe for busy nights or when you want a hearty, satisfying meal with minimal effort.

Ingredients

Units Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup uncooked long-grain white rice
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 1/2 cups water or chicken broth
  • 1 packet (1 oz) onion soup mix
  • Salt and pepper, to taste
  • Optional garnish: fresh parsley or chives, chopped

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC).
  2. In a large mixing bowl, combine the cream of mushroom soup, cream of chicken soup, water (or broth), and uncooked rice. Mix until well blended.
  3. Pour the rice mixture evenly into a greased 9×13-inch baking dish.
  4. Season the chicken breasts with salt and pepper, then place them on top of the rice mixture in the baking dish.
  5. Sprinkle the onion soup mix evenly over the chicken and rice.
  6. Cover the baking dish tightly with aluminum foil to lock in moisture.
  7. Bake for 1 hour and 30 minutes, or until the chicken is fully cooked and the rice is tender.
  8. Remove from the oven, carefully uncover, and let the dish rest for 5 minutes before serving.
  9. Garnish with fresh parsley or chives, if desired, and serve warm.

Notes

  • For a creamier texture, use half-and-half instead of water or broth.
  • Feel free to add vegetables like peas, carrots, or mushrooms to the rice mixture before baking.
  • Ensure the foil is sealed tightly to prevent the rice from drying out during cooking.
