Ingredients

Units Scale
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 large egg plus 1 egg yolk
  • 2 cups applesauce
  • 1/2 cup milk
  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground allspice
  • 1 1/2 teaspoons salt
  • 1 cup chopped walnuts or pecans
  • 1 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or a bundt pan.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and egg yolk, mixing well to combine.
  4. Stir in the applesauce and milk until the mixture is smooth.
  5. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, cloves, allspice, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  7. Fold in the chopped nuts and raisins, if using.
  8. Pour the batter into the prepared pan, spreading it evenly.
  9. Bake for 40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool in the pan on a wire rack before serving.

Notes

  • For a fancier presentation, drizzle the cooled cake with a simple glaze made by mixing ½ cup confectioners’ sugar with 1 to 2 teaspoons of water.
  • This cake pairs well with a cup of coffee or tea and can be served as a dessert or a sweet breakfast treat.
