Description

Amish Harvest Casserole is a warm, filling dish made with layers of ground beef, fresh vegetables, rice, and a savory tomato-based sauce. It’s packed with simple, comforting flavors and makes a perfect all-in-one meal for busy weeknights or chilly evenings.


Ingredients

  • 1 lb ground beef

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 2 cups cooked brown or white rice

  • 1 cup diced carrots

  • 1 cup diced potatoes (peeled)

  • 1 cup chopped green beans (fresh or frozen)

  • 1 can (15 oz) diced tomatoes, undrained

  • 1 can (10.5 oz) condensed tomato soup

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp dried thyme

  • 1/2 tsp paprika

 

  • 1/2 cup shredded cheddar cheese (optional, for topping)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  2. In a skillet over medium heat, cook the ground beef, onion, and garlic until the meat is browned and the onion is soft. Drain any excess grease.

  3. In a large bowl, combine the cooked rice, carrots, potatoes, green beans, diced tomatoes, tomato soup, and seasonings.

  4. Add the cooked beef mixture to the bowl and stir everything until well mixed.

  5. Pour the mixture into the prepared baking dish and spread it out evenly.

  6. Cover with foil and bake for 45–50 minutes, or until the vegetables are tender.

  7. If using cheese, uncover the casserole, sprinkle cheddar on top, and bake for an additional 5–10 minutes until melted and bubbly.

  8. Let rest for a few minutes before serving.


Notes

You can substitute ground turkey or chicken for a lighter version.

 

Add corn or peas for extra veggie variety.

 

Make it ahead and refrigerate before baking — just add 10–15 minutes to bake time if coming straight from the fridge.
