For the Bread:
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup (115g) unsalted butter, softened
- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup (120ml) buttermilk (or milk with 1/2 teaspoon vinegar)
- 1 1/2 cups (2 medium) apples, peeled and diced
For the Brown Sugar Swirl:
- 1/3 cup (70g) brown sugar
- 1 teaspoon ground cinnamon
For the Topping (Optional):
- 2 tablespoons brown sugar
- 1 tablespoon butter, melted
Instructions
- Preheat the ovenย to 350ยฐF (175ยฐC). Grease a 9×5-inch loaf pan and line with parchment paper.
- Mix the dry ingredients:ย In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
- Cream the butter and sugar:ย In a large bowl, beat the butter and granulated sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.
- Combine wet and dry ingredients:ย Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix until just combined.
- Prepare the brown sugar swirl:ย In a small bowl, mix the brown sugar and cinnamon.
- Assemble the bread:ย Pour half of the batter into the loaf pan. Sprinkle half of the brown sugar swirl mixture over the batter, then add half of the diced apples. Repeat with the remaining batter, brown sugar mixture, and apples.
- Bake:ย Place in the oven and bake forย 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Add optional topping:ย While warm, brush the top with melted butter and sprinkle brown sugar for extra sweetness.
