Description

Ingredients

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg (optional)
  • 1/2 teaspoon salt
  • 1 cup unsweetened applesauce
  • 1/2 cup brown sugar (lightly packed)
  • 1/3 cup vegetable oil (or melted coconut oil)
  • 2 large eggs
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease with non-stick spray.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg (if using), and salt.
  3. In another bowl, combine the applesauce, brown sugar, oil, eggs, and vanilla extract. Mix until smooth and well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  5. Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
