Description
A spot-on homemade version of Arbyโs Beef & Cheddar sandwich, featuring tender roast beef, creamy cheddar cheese sauce, and a zesty Red Ranch sauce on a toasted sesame bun.

- 1 lb thinly sliced roast beef
- 4 sesame seed sandwich buns
- Cheddar Cheese Sauce:
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1 cup whole milk
- 1 1/2 cups shredded sharp cheddar cheese
- 1/2 tsp Dijon mustard
- Salt and pepper to taste
- Red Ranch Sauce:
- 1/3 cup mayonnaise
- 2 tbsp ketchup
- 2 tsp Dijon mustard
- 1 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper (optional)
- Salt to taste
Instructions
- Preheat oven to 350ยฐF. Wrap roast beef in foil and warm for 10 minutes.
- In a saucepan, melt butter over medium heat. Add flour and whisk for 1 minute.
- Gradually add milk, whisking until smooth and thickened.
- Remove from heat. Stir in cheddar cheese and Dijon mustard. Season with salt and pepper.
- In a bowl, whisk together all Red Ranch sauce ingredients. Adjust seasoning to taste.
- Toast sandwich buns until lightly golden.
- Assemble sandwiches: bottom bun, warm roast beef, cheese sauce, Red Ranch sauce, top bun.
- Serve warm with sides of your choice.
Notes
- Deli roast beef works great for this recipe.
- Make sauces in advance and refrigerate for up to 5 days.
- Use Pepper Jack for a spicier cheese sauce.
