Description

A spot-on homemade version of Arbyโ€™s Beef & Cheddar sandwich, featuring tender roast beef, creamy cheddar cheese sauce, and a zesty Red Ranch sauce on a toasted sesame bun.


Ingredients

  • 1 lb thinly sliced roast beef
  • 4 sesame seed sandwich buns
  • Cheddar Cheese Sauce:
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1/2 tsp Dijon mustard
  • Salt and pepper to taste
  • Red Ranch Sauce:
  • 1/3 cup mayonnaise
  • 2 tbsp ketchup
  • 2 tsp Dijon mustard
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper (optional)
  • Salt to taste

Instructions

  1. Preheat oven to 350ยฐF. Wrap roast beef in foil and warm for 10 minutes.
  2. In a saucepan, melt butter over medium heat. Add flour and whisk for 1 minute.
  3. Gradually add milk, whisking until smooth and thickened.
  4. Remove from heat. Stir in cheddar cheese and Dijon mustard. Season with salt and pepper.
  5. In a bowl, whisk together all Red Ranch sauce ingredients. Adjust seasoning to taste.
  6. Toast sandwich buns until lightly golden.
  7. Assemble sandwiches: bottom bun, warm roast beef, cheese sauce, Red Ranch sauce, top bun.
  8. Serve warm with sides of your choice.

Notes

  • Deli roast beef works great for this recipe.
  • Make sauces in advance and refrigerate for up to 5 days.
  • Use Pepper Jack for a spicier cheese sauce.
