Description

Artichoke Bruschetta is a fresh and flavorful appetizer that’s quick to make and perfect for parties, potlucks, or a light snack. Creamy marinated artichokes are blended with garlic, lemon, and herbs, then spooned over toasted bread for a bright and zesty bite.


Ingredients

  • 1 (14 oz) can or jar of marinated artichoke hearts, drained and chopped

  • 1 small garlic clove, minced

  • 1 tablespoon fresh lemon juice

  • 2 tablespoons olive oil

  • 2 tablespoons grated Parmesan cheese

  • 2 tablespoons chopped fresh parsley

  • Salt and black pepper, to taste

  • 1 French baguette, sliced into 1/2-inch rounds

 

  • Extra olive oil, for brushing


Instructions

  • Preheat oven to 400°F (200°C).

  • Arrange baguette slices on a baking sheet and lightly brush with olive oil.

  • Toast in the oven for 6–8 minutes, or until golden and crisp.

  • While the bread toasts, combine chopped artichokes, garlic, lemon juice, olive oil, Parmesan, and parsley in a bowl. Mix well and season with salt and pepper to taste.

  • Spoon the artichoke mixture onto the toasted baguette slices.

 

  • Serve immediately, or chill the topping and assemble just before serving.


Notes

You can add a sprinkle of red pepper flakes for a little heat.

 

Want it cheesier? Try topping with shredded mozzarella and popping it under the broiler for a minute.

 

This recipe is super easy to double or triple for a crowd.
