Description
Artichoke Bruschetta is a fresh and flavorful appetizer that’s quick to make and perfect for parties, potlucks, or a light snack. Creamy marinated artichokes are blended with garlic, lemon, and herbs, then spooned over toasted bread for a bright and zesty bite.
Ingredients

1 (14 oz) can or jar of marinated artichoke hearts, drained and chopped

1 small garlic clove, minced

1 tablespoon fresh lemon juice

2 tablespoons olive oil

2 tablespoons grated Parmesan cheese

2 tablespoons chopped fresh parsley

Salt and black pepper, to taste

1 French baguette, sliced into 1/2-inch rounds

Extra olive oil, for brushing
Instructions

Preheat oven to 400°F (200°C).

Arrange baguette slices on a baking sheet and lightly brush with olive oil.

Toast in the oven for 6–8 minutes, or until golden and crisp.

While the bread toasts, combine chopped artichokes, garlic, lemon juice, olive oil, Parmesan, and parsley in a bowl. Mix well and season with salt and pepper to taste.

Spoon the artichoke mixture onto the toasted baguette slices.

Serve immediately, or chill the topping and assemble just before serving.
Notes
You can add a sprinkle of red pepper flakes for a little heat.
Want it cheesier? Try topping with shredded mozzarella and popping it under the broiler for a minute.
This recipe is super easy to double or triple for a crowd.
