For the Biscuits
- 2 cups all-purpose flour
- 1 tablespoon baking powder

- 3/4 cup cold whole milk

- 8 slices bacon
- 4 large eggs
- 1 tablespoon milk
- Salt and black pepper, to taste
- 1 tablespoon butter (for scrambling)
- 4 slices cheddar cheese (or cheese of choice)
Instructions
- Make the Biscuit Dough: Preheat your oven to 425ยฐF (220ยฐC). In a large mixing bowl, whisk together the flour, baking powder, and salt. Add the cold butter and cut it in using a pastry blender or your fingertips until the mixture resembles coarse crumbs. Pour in the milk and stir just until a shaggy dough forms.
- Shape and Bake the Biscuits: Turn the dough onto a lightly floured surface. Gently knead a few times, then pat it into a 3/4-inch-thick rectangle. Use a biscuit cutter or glass to cut out 4 biscuits. Place them on a parchment-lined baking sheet. Bake for 12โ15 minutes, or until golden brown. Cool slightly.
- Cook the Bacon: While the biscuits bake, cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and set aside.
- Scramble the Eggs: Whisk the eggs with 1 tablespoon milk, salt, and pepper. In a nonstick skillet over medium-low heat, melt 1 tablespoon butter. Pour in the eggs and cook, gently stirring, until just set and fluffy. Divide into four portions.
- Assemble the Sandwiches: Slice the warm biscuits in half horizontally. Layer each bottom half with a portion of scrambled eggs, 2 slices of bacon, and a slice of cheese. Place the top half of the biscuit on top. If desired, return assembled sandwiches to the oven for 2โ3 minutes to melt the cheese further.
