Units Scale

Main Ingredients

  • 1 (32-ounce) bag frozen tater tots
  • 8 slices bacon, chopped
  • 8 large eggs
  • 2 cups shredded cheddar cheese
  • 1 cup whole milk
  • 1/2 medium onion, finely diced
  • 2 green onions, sliced (optional, for garnish)
  • Salt and pepper to taste

Optional Add-ins

  • 1/2 cup diced bell pepper
  • 1/2 cup baby spinach, chopped

Instructions

  1. Preheat the oven: Preheat your oven to 350ยฐF (175ยฐC) and lightly grease a 9×13-inch baking dish.
  2. Cook the bacon: In a large skillet over medium heat, cook the chopped bacon pieces until crispy. Remove bacon with a slotted spoon and drain on paper towels. Reserve 1 tablespoon of the bacon fat; discard the rest.
  3. Saute onions: In the same skillet with reserved bacon fat, sautรฉ the onions (and bell peppers, if using) for about 2-3 minutes, until softened. Set aside.
  4. Assemble casserole base: Arrange the frozen tater tots in a single layer in the prepared baking dish. Sprinkle the cooked bacon, sautรฉed vegetables, and half the shredded cheese over the tots.
  5. Prepare egg mixture: In a large bowl, whisk together eggs, milk, salt, and pepper until well combined.
  6. Combine and top: Pour the egg mixture evenly over the tater tots and toppings. Sprinkle the remaining cheddar cheese over the top.
  7. Bake: Bake, uncovered, for 40โ€“45 minutes, or until the eggs are set in the center and the top is golden brown.
  8. Cool and serve: Let the casserole cool for 5-10 minutes. Garnish with green onions and serve warm.

Notes

  • For a vegetarian option, omit bacon or substitute with plant-based bacon.
  • Make ahead: Assemble the night before, then bake in the morning.
  • Customize with your favorite cheeses or vegetables.
  • Leftovers store well in the fridge for up to 3 days.
