Description
A gooey grilled cheese sandwich layered with creamy guacamole, crispy bacon, and melty cheddar–jack cheese on buttery grilled sourdough.

- 1 Tbsp salted butter, room temperature
- 2 slices sourdough bread
- 1/2 cup shredded cheddar and jack cheese blend
- 2 Tbsp guacamole, room temperature
- 2 slices cooked bacon, crumbled
- 1 Tbsp crushed tortilla chips (optional)
Instructions
- Preheat a skillet over medium heat.
- Butter one side of each bread slice.
- On the unbuttered side of one slice, layer half the cheese, guacamole, bacon, tortilla chips, then the remaining cheese.
- Top with the second slice of bread, buttered side up.
- Grill sandwich in the skillet until golden brown and cheese is melted, about 2–4 minutes per side.
- Flip carefully and cook the other side until golden and cheese is gooey.
- Slice and serve immediately.
Notes
- Let all ingredients reach room temperature so the cheese melts fully.
- To add extra crunch or flavor, mix different cheeses or a dash of hot sauce
- Leftovers can be reheated in a skillet with a splash of water, covered for 2 minutes to refresh the melt.
