Description

These rich and fudgy Baileys Cheesecake Brownies combine a dense chocolate brownie base with a creamy Baileys Irish Cream cheesecake swirl on top. They’re the perfect adult treat for holidays, parties, or when you’re just craving something indulgent with a boozy twist.

Ingredients

Units Scale

For the Brownie Layer:

1/2 cup (1 stick) unsalted butter

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup Baileys Irish Cream

1/2 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1/4 teaspoon salt

1/4 teaspoon baking powder

For the Cheesecake Swirl:

8 oz cream cheese, softened

1/4 cup granulated sugar

1 egg yolk

1/4 cup Baileys Irish Cream

1/2 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.

  • In a medium saucepan over low heat, melt the butter. Remove from heat and stir in the sugar, eggs, vanilla, and Baileys.

  • In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder. Gradually stir into the wet ingredients until just combined.

  • Pour the brownie batter into the prepared pan and spread evenly.

  • In another bowl, beat the softened cream cheese with sugar until smooth. Mix in the egg yolk, Baileys, and vanilla until creamy.

  • Drop spoonfuls of the cheesecake mixture over the brownie batter. Use a knife or skewer to gently swirl the two layers together.

  • Bake for 30–35 minutes, or until the center is set and a toothpick comes out with a few moist crumbs.

  • Let cool completely in the pan before slicing.

Notes

  • For cleaner cuts, chill the brownies in the fridge before slicing.

  • These brownies can be stored in an airtight container in the fridge for up to 5 days.

  • Add chocolate chips to the brownie batter for extra richness.
