For the Chocolate Mint Pudding:

- 4 ounces semi-sweet chocolate, chopped

- 1 cup heavy whipping cream (for topping)
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup chocolate sandwich cookies, crushed (e.g., Oreos)
- Chocolate shavings or mini chocolate chips (for garnish)
- Fresh mint leaves (optional)
Instructions
- Make the Pudding:
- In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.
- Gradually add the milk and heavy cream, whisking constantly.
- Cook over medium heat, stirring frequently, until the mixture starts to thicken.
- In a small bowl, whisk egg yolks. Slowly add a few tablespoons of the hot pudding mixture to temper the eggs, then return the mixture to the saucepan.
- Continue cooking for another 2-3 minutes until the pudding thickens. Remove from heat.
- Stir in chopped chocolate, Baileys, peppermint extract, and vanilla extract. Mix until smooth.
- Pour into a bowl and cover with plastic wrap (pressing it onto the surface to prevent a skin from forming). Refrigerate for at least 2 hours.
- Prepare the Whipped Cream:
- In a mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
- Assemble the Parfaits:
- In serving glasses or jars, layer crushed cookies, chocolate mint pudding, and whipped cream. Repeat layers as desired.
- Top with chocolate shavings, mini chocolate chips, or fresh mint leaves for garnish.
- Chill & Serve:
- Refrigerate for 30 minutes before serving for the best texture. Enjoy!

- For a non-alcoholic version, replace Baileys with an equal amount of heavy cream and add a bit more vanilla extract.
