Ingredients

Units Scale

Vegetable Mixture

  • 2 cups finely chopped fresh broccoli florets (about 1 small head)
  • 1/2 cup finely chopped onion

Cheese & Binders

  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Breading

  • 1 cup panko breadcrumbs (plus extra for coating)

Optional for Serving

  • Marinara sauce or ranch dressing, for dipping

Instructions

  1. Preheat Oven โ€“ Preheat your oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Prepare Broccoli โ€“ Steam or microwave the chopped broccoli until just tender, about 2-3 minutes. Let it cool slightly, then blot dry with a towel to remove excess moisture.
  3. Mix Ingredients โ€“ In a large bowl, combine the cooled broccoli, onion, cheddar cheese, Parmesan cheese, eggs, garlic powder, salt, pepper, and panko breadcrumbs. Mix until everything is well combined and holds together when pressed.
  4. Shape Balls โ€“ Using your hands or a tablespoon, scoop out portions of the mixture and roll into 1 1/2-inch balls. If the mixture is too sticky, wet your hands lightly or add a bit more breadcrumbs.
  5. Coat and Arrange โ€“ Roll each ball lightly in additional panko breadcrumbs for an extra-crispy texture, then place them on the prepared baking sheet, leaving space between each ball.
  6. Bake โ€“ Bake in the preheated oven for 22-25 minutes, or until the balls are golden brown and set on all sides. Gently turn the balls halfway through baking for even browning.
  7. Serve โ€“ Let cool for a few minutes before serving. Enjoy warm with your favorite dipping sauce, such as marinara or ranch.

Notes

  • For a gluten-free version, use gluten-free breadcrumbs.
  • You can substitute other cheeses, such as mozzarella or pepper jack, for a different flavor.
  • The balls can be shaped ahead and refrigerated up to 1 day before baking.
  • Leftovers will keep in an airtight container in the fridge for up to 3 days and can be reheated in the oven or air fryer.
  • Add a pinch of chili flakes or a dash of hot sauce for extra heat.
