For the Doughnuts:
- 1 cup (125g) all-purpose flour
- 1/4 cup (25g) unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup (50g) packed brown sugar
- 2 tablespoons (25g) granulated sugar
- 1 large egg, room temperature
- 1/3 cup (80ml) stout beer (e.g., Guinness), room temperature
- 1/2 teaspoon vanilla extract
- 2 tablespoons (30g) unsalted butter, melted
- 2 tablespoons (30ml) buttermilk, room temperature
For the Glaze:
- 1 ounce (28g) semisweet chocolate, chopped
- 1 tablespoon (14g) unsalted butter
- 1 tablespoon powdered sugar
- 2 teaspoons stout beer
Instructions
- Preheat Oven: Preheat your oven to 325°F (165°C). Lightly grease a 6-cavity doughnut baking pan.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, cocoa powder, baking soda, salt, brown sugar, and granulated sugar.
- Combine Wet Ingredients: In a separate bowl, whisk together the egg, stout beer, and vanilla extract until well combined.
- Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix gently. Add the melted butter and buttermilk, stirring until just combined. Avoid overmixing.
- Fill Doughnut Pan: Transfer the batter into a piping bag or use a spoon to fill each doughnut cavity about three-quarters full.
- Bake: Bake for 8–9 minutes, or until a toothpick inserted into the doughnuts comes out clean. Allow the doughnuts to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
- Prepare Glaze: In a microwave-safe bowl, combine the chopped semisweet chocolate and butter. Microwave in 15-second intervals, stirring between each, until melted and smooth. Whisk in the powdered sugar and stout beer until the glaze is smooth.
- Glaze Doughnuts: Dip the top of each cooled doughnut into the glaze, allowing any excess to drip off. Place the glazed doughnuts on a wire rack and let the glaze set before serving.
