Description

This Baked Crunchy Hot Honey Chicken is oven-fried to golden perfection and drizzled with a sticky-sweet hot honey glaze. Itโ€™s a healthier spin on crispy fried chicken with all the flavor and none of the mess. Perfect for dinner, game day, or meal prep!

 


Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)

  • 1 cup buttermilk (or milk + 1 tbsp lemon juice)

  • 1 tsp hot sauce (optional, for marinade)

  • 1 1/2 cups crushed cornflakes or panko breadcrumbs

  • 1/2 cup grated Parmesan cheese (optional, for extra flavor)

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • Olive oil spray or cooking spray

For the Hot Honey:

  • 1/3 cup honey

  • 1-2 tbsp hot sauce (adjust to heat preference)

  • 1/2 tsp red pepper flakes (optional)

  • 1 tsp apple cider vinegar or lemon juice


Instructions

  • Marinate the chicken:
    In a bowl or zip-top bag, mix buttermilk and hot sauce. Add chicken and let it marinate for at least 30 minutes (or up to overnight in the fridge).

  • Prep the coating:
    In a shallow bowl, mix crushed cornflakes (or panko), Parmesan, garlic powder, paprika, salt, and pepper.

  • Coat the chicken:
    Preheat oven to 425ยฐF (220ยฐC). Line a baking sheet with parchment and place a wire rack on top (optional but helps crisp). Remove chicken from marinade, letting excess drip off, then press each piece into the coating mixture, pressing firmly to adhere.

  • Bake:
    Place coated chicken on the rack or baking sheet. Lightly spray tops with olive oil or cooking spray. Bake for 25โ€“30 minutes, flipping halfway, until golden and crispy and internal temp reaches 165ยฐF (74ยฐC).

  • Make the hot honey:
    In a small saucepan, warm honey, hot sauce, red pepper flakes, and vinegar over low heat for 2โ€“3 minutes. Stir well, then remove from heat.

 

  • Drizzle and serve:
    Once chicken is out of the oven, drizzle with warm hot honey or serve it on the side for dipping.


Notes

  • For extra crunch, double-coat the chicken by dipping back into the buttermilk and crumbs before baking.

  • Adjust the spice level of the hot honey to your liking.

  • This is great served with mashed potatoes, slaw, or a crisp salad.
