Doughnuts:
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/3 cup granulated sugar
- 1/2 cup fresh strawberries, finely chopped
- 1/2 cup buttermilk
- 1 large egg
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract
Strawberry Glaze:
- 1/2 cup powdered sugar
- 2 tbsp fresh strawberry puree (blend a few strawberries to make puree)
- 1โ2 tsp milk (if needed, for consistency)
Instructions
- Prepare the Doughnuts
Preheat your oven to 350ยฐF (175ยฐC). Lightly grease a doughnut pan with non-stick spray or butter. - Mix Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sugar. - Mix Wet Ingredients
In another bowl, whisk the buttermilk, egg, melted butter, and vanilla extract until combined. - Combine and Add Strawberries
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chopped strawberries gently. - Fill the Doughnut Pan
Spoon the batter into the prepared doughnut pan, filling each cavity about 3/4 full. - Bake
Bake for 10-12 minutes, or until a toothpick inserted into a doughnut comes out clean. Let them cool in the pan for 5 minutes, then transfer to a wire rack. - Prepare the Glaze
In a small bowl, whisk together the powdered sugar and strawberry puree until smooth. If needed, add milk 1 teaspoon at a time to achieve a drippable consistency. - Glaze the Doughnuts
Once the doughnuts are completely cool, dip the tops into the glaze or drizzle it over the doughnuts. Let the glaze set before serving.
Notes
- If you donโt have a doughnut pan, you can use a muffin pan and bake for 12-15 minutes.
- For extra flavor, toss the chopped strawberries in a teaspoon of sugar before folding them into the batter.
