Description

These baked strawberry cake doughnuts are soft, moist, and bursting with fresh strawberry flavor. Perfect for a quick breakfast treat or a sweet snack, these doughnuts are baked instead of fried, making them lighter and easier to make. Finished with a sweet strawberry glaze, they are a delightful treat for any occasion.

Ingredients

Units Scale

Doughnuts:

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup granulated sugar
  • 1/2 cup fresh strawberries, finely chopped
  • 1/2 cup buttermilk
  • 1 large egg
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract

Strawberry Glaze:

  • 1/2 cup powdered sugar
  • 2 tbsp fresh strawberry puree (blend a few strawberries to make puree)
  • 1โ€“2 tsp milk (if needed, for consistency)

Instructions

  1. Prepare the Doughnuts
Preheat your oven to 350ยฐF (175ยฐC). Lightly grease a doughnut pan with non-stick spray or butter.
  2. Mix Dry Ingredients
In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
  3. Mix Wet Ingredients
In another bowl, whisk the buttermilk, egg, melted butter, and vanilla extract until combined.
  4. Combine and Add Strawberries
Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chopped strawberries gently.
  5. Fill the Doughnut Pan
Spoon the batter into the prepared doughnut pan, filling each cavity about 3/4 full.
  6. Bake
Bake for 10-12 minutes, or until a toothpick inserted into a doughnut comes out clean. Let them cool in the pan for 5 minutes, then transfer to a wire rack.
  7. Prepare the Glaze
In a small bowl, whisk together the powdered sugar and strawberry puree until smooth. If needed, add milk 1 teaspoon at a time to achieve a drippable consistency.
  8. Glaze the Doughnuts
Once the doughnuts are completely cool, dip the tops into the glaze or drizzle it over the doughnuts. Let the glaze set before serving.

Notes

  • If you donโ€™t have a doughnut pan, you can use a muffin pan and bake for 12-15 minutes.
  • For extra flavor, toss the chopped strawberries in a teaspoon of sugar before folding them into the batter.
