Description

Thisย Banana Icebox Cakeย is a no-bake, easy-to-make dessert with layers of graham crackers, fresh bananas, and a creamy pudding mixture.   • 1 box graham crackers (about 18 sheets)
  • 4 ripe bananas, sliced
  • 1/2 teaspoon lemon juice (to prevent bananas from browning)
  • Optional: Caramel sauce, crushed nuts, or chocolate shavings for garnish

Instructions

  1. Make the Whipped Creamย โ€“ In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Set aside.
  2. Prepare the Puddingย โ€“ In another bowl, whisk together the vanilla pudding mix and cold milk until thickened. Fold in half of the whipped cream or whipped topping.
  3. Layer the Cakeย โ€“ Spread a thin layer of pudding mixture on the bottom of a 9×13-inch dish. Add a layer of graham crackers, breaking them if needed to fit.
  4. Add Bananasย โ€“ Toss the sliced bananas with lemon juice (to prevent browning), then spread a layer over the graham crackers.
