For the Cake:
- 2 cups (250g) all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 1/2 cup (100g) brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 ripe bananas, mashed
- 1/2 cup (120ml) buttermilk
- 3/4 cup (90g) chopped walnuts
For the Cream Cheese Frosting (Optional):
- 8 oz (225g) cream cheese, softened
- 1/2 cup (115g) unsalted butter, softened
- 2 cups (240g) powdered sugar
- 1 teaspoon vanilla extract
Instructions
Make the Cake:
- Preheat & Prep: Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan (or two 8-inch round cake pans).
- Mix Dry Ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon. Set aside.
- Cream Butter & Sugar: In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
- Add Eggs & Bananas: Beat in the eggs one at a time. Stir in vanilla extract, then fold in mashed bananas.
- Combine & Add Walnuts: Alternately add the dry ingredients and buttermilk, mixing gently until just combined. Fold in the chopped walnuts.
- Bake: Pour the batter into the prepared pan. Bake for 30-35 minutes (or until a toothpick inserted in the center comes out clean).
- Cool: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before frosting.
Make the Frosting (Optional):
- Beat the cream cheese and butter together until smooth.
- Gradually add powdered sugar and vanilla, beating until fluffy.
- Spread evenly over the cooled cake.
Notes
- For extra crunch, toast the walnuts before adding them to the batter.
- If you love extra banana flavor, add a fourth mashed banana.
