Description

BBQ Cauliflower Bites Bowl is a hearty and flavorful plant-based meal featuring crispy baked BBQ cauliflower bites served over a bed of grains and fresh vegetables, drizzled with a creamy vegan dressing.


Ingredients

  • 3/4 cup BBQ sauce (vegan)
  • 1 tablespoon olive oil
  • 2 cups cooked brown rice or quinoa
  • 1 cup shredded lettuce or spinach
  • 1/2 cup corn (fresh or frozen)
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1 avocado, sliced
  • For the dressing: 1/4 cup vegan mayo or tahini, 1 tablespoon lemon juice, 1 teaspoon maple syrup, 1/2 teaspoon Dijon mustard, water to thin

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, plant milk, garlic powder, smoked paprika, salt, and pepper to form a batter.
  3. Dip cauliflower florets into the batter, letting excess drip off, and place on the baking sheet.
  4. Bake for 20 minutes, flipping halfway through. Remove and toss with BBQ sauce, then return to the oven for another 10 minutes until crispy.
  5. While cauliflower bakes, prepare the bowl ingredients: cook rice or quinoa, prep veggies, and mix dressing ingredients until smooth.
  6. Assemble bowls with a base of grains and greens, then top with BBQ cauliflower, corn, beans, tomatoes, red onion, and avocado.
  7. Drizzle with dressing and serve immediately.
