Description

These beef and bean burritos are a hearty and flavorful Mexican-inspired dish, perfect for a quick dinner or a meal prep option.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) refried beans
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 6 large flour tortillas
  • 1 tbsp olive oil
  • Optional toppings: sour cream, chopped lettuce, diced tomatoes, jalapeรฑos

Instructions

  1. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks.
  2. Drain excess fat, then add taco seasoning and water. Stir to combine and simmer for 5 minutes.
  3. Add refried beans and salsa to the skillet. Mix well and cook for another 3โ€“4 minutes until heated through.
  4. Warm the tortillas in a microwave or on a skillet until pliable.
  5. Spoon the beef and bean mixture onto each tortilla. Sprinkle with cheddar cheese.
  6. Fold in the sides and roll up the tortillas to form burritos.
  7. Optional: Place the burritos seam side down in a heated skillet and cook for 1โ€“2 minutes on each side for a crispy finish.
  8. Serve warm with desired toppings.
