Description

Best French Toast Muffin Cups are a quick and easy breakfast option made with cubed bread soaked in a cinnamon-vanilla egg mixture, baked into handheld muffin cups perfect for busy mornings.

Ingredients

Units Scale
  • 6 cups cubed bread (preferably day-old)
  • 4 large eggs
  • 1 cup milk
  • 1/4 cup heavy cream
  • 1/4 cup maple syrup or brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Butter or cooking spray for greasing
  • Powdered sugar and maple syrup for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin with butter or cooking spray.
  2. In a large bowl, whisk together eggs, milk, cream, maple syrup (or brown sugar), vanilla, cinnamon, and salt.
  3. Add the cubed bread to the mixture and gently stir to coat all pieces evenly. Let soak for 5–10 minutes.
  4. Spoon the soaked bread evenly into the prepared muffin cups, pressing down gently to compact slightly.
  5. Bake for 20–25 minutes or until golden brown and set in the center.
  6. Cool slightly before removing from the muffin tin. Serve warm with powdered sugar or maple syrup if desired.

Notes

  • Use brioche or challah bread for extra richness.
  • Can be made ahead and refrigerated overnight before baking.
  • Add chopped fruit or chocolate chips for variety.
