The Best Grilled Cheese Burrito is a delicious homemade copycat of the Taco Bell favorite, filled with seasoned beef, rice, nacho cheese, sour cream, and more, all wrapped in a warm tortilla and grilled to cheesy perfection.

- 1 lb ground beef
- 1 tablespoon taco seasoning
- 1/2 cup water
- 1 cup cooked rice
- 1/2 cup nacho cheese sauce
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup chipotle sauce or spicy mayo
- 1/2 cup seasoned tortilla strips (optional)
- 4 large flour tortillas
- 1 cup shredded Mexican cheese blend (for grilling)
- 1 tablespoon butter or oil (for grilling)
Instructions
- In a skillet over medium heat, cook ground beef until browned. Drain excess fat, then add taco seasoning and water. Simmer for 5 minutes until thickened.
- Warm tortillas slightly to make them pliable. Layer each with rice, seasoned beef, nacho cheese sauce, cheddar cheese, sour cream, chipotle sauce, and tortilla strips if using.
- Fold each tortilla into a burrito, tucking in the sides and rolling tightly.
- Sprinkle shredded Mexican cheese on the outside of each burrito and gently press to adhere.
- In a large skillet or griddle, melt butter or oil over medium heat. Grill each burrito, cheese side down first, until golden and crispy, then flip and cook the other side.
- Serve hot with extra sauce or salsa on the side if desired.
Notes
- You can use ground turkey or a plant-based alternative for a lighter version.
- Make it spicier by adding jalapeños or hot sauce inside.
- Use store-bought or homemade nacho cheese sauce.
- Leftovers can be reheated on a skillet or air fryer to maintain crispiness.
