Ingredients

  • 2 racks baby back ribs (about 4 pounds total)
  • 1/4 cup brown sugar
  • 1 tablespoon paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 cup barbecue sauce (plus more for serving)

Instructions

  1. Preheat your grill to medium heat (about 300ยฐF or 150ยฐC).
  2. In a small bowl, mix together brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
  3. Remove the membrane from the back of the ribs and pat dry with paper towels.
  4. Rub the spice mixture evenly over both sides of the ribs.
  5. Place the ribs on the grill over indirect heat, bone side down, and cover.
  6. Cook for 2 to 2.5 hours, maintaining the grill temperature around 300ยฐF (150ยฐC).
  7. During the last 30 minutes of cooking, brush the ribs generously with barbecue sauce.
  8. Move the ribs to direct heat for the last 5-10 minutes to caramelize the sauce, flipping occasionally.
  9. Remove from grill, let rest for 10 minutes, then slice and serve with extra barbecue sauce.

Notes

  • Wrap ribs in foil during the first hour for even more tender meat.
  • Use a smoker box or wood chips for an extra smoky flavor.
