- 2 racks baby back ribs (about 4 pounds total)
- 1/4 cup brown sugar
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1 cup barbecue sauce (plus more for serving)
Instructions
- Preheat your grill to medium heat (about 300ยฐF or 150ยฐC).
- In a small bowl, mix together brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
- Remove the membrane from the back of the ribs and pat dry with paper towels.
- Rub the spice mixture evenly over both sides of the ribs.
- Place the ribs on the grill over indirect heat, bone side down, and cover.
- Cook for 2 to 2.5 hours, maintaining the grill temperature around 300ยฐF (150ยฐC).
- During the last 30 minutes of cooking, brush the ribs generously with barbecue sauce.
- Move the ribs to direct heat for the last 5-10 minutes to caramelize the sauce, flipping occasionally.
- Remove from grill, let rest for 10 minutes, then slice and serve with extra barbecue sauce.
Notes
- Wrap ribs in foil during the first hour for even more tender meat.
- Use a smoker box or wood chips for an extra smoky flavor.
- Test doneness by checking if the ribs bend easily or if meat pulls away from the bone.
