Instructions
Prepare the Crust:
- Preheat your oven to 325ยฐF (163ยฐC).
- In a bowl, mix the chocolate cookie crumbs and melted butter until evenly combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan. Set aside.
Make the Cheesecake Filling:
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add eggs, one at a time, mixing well after each addition.
- Stir in the sour cream, heavy cream, melted chocolate, and vanilla extract. Mix until fully combined.
- Pour the filling over the prepared crust and smooth the top with a spatula.
Bake the Cheesecake:
- Place the cheesecake pan in a larger baking dish. Fill the dish with hot water, halfway up the sides of the springform pan, to create a water bath.

- Remove from the oven, let cool to room temperature, then refrigerate for at least 6 hours or overnight.
