Description

This creamy and fruity Blackberry-Banana Ice Cream is the perfect blend of tart blackberries and sweet bananas. Itโ€™s naturally sweetened, dairy-free, and requires no ice cream maker. A refreshing, guilt-free treat thatโ€™s easy to make and perfect for hot summer days!

Ingredients

Units Scale
  • 2 ripe bananas, sliced and frozen
  • 1 cup fresh blackberries (or frozen)
  • 1/2 cup coconut milk (or any plant-based milk)
  • 1 tbsp honey or maple syrup (optional for added sweetness)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Prepare ingredients: Ensure the bananas are sliced and frozen in advance. If using fresh blackberries, wash them thoroughly.
  2. Blend: In a high-powered blender or food processor, add the frozen bananas, blackberries, coconut milk, honey (if using), vanilla extract, and salt.
  3. Blend until smooth: Pulse and blend on high until the mixture is creamy and smooth. You may need to scrape down the sides of the blender a few times.
  4. Freeze: Transfer the mixture to a freezer-safe container and smooth out the top. Cover and freeze for 2-3 hours, or until firm.
  5. Serve: Scoop out the ice cream into bowls or cones, and enjoy immediately. If itโ€™s too hard, let it sit at room temperature for 5-10 minutes to soften.

Notes

  • For an extra creamy texture, use full-fat coconut milk.
  • You can adjust the sweetness by adding more honey or maple syrup, or omitting it entirely for a more natural flavor.
  • Garnish with fresh blackberries, mint leaves, or a drizzle of honey for added presentation.
