- 2 ripe bananas, sliced and frozen
- 1 cup fresh blackberries (or frozen)
- 1/2 cup coconut milk (or any plant-based milk)
- 1 tbsp honey or maple syrup (optional for added sweetness)
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Prepare ingredients: Ensure the bananas are sliced and frozen in advance. If using fresh blackberries, wash them thoroughly.
- Blend: In a high-powered blender or food processor, add the frozen bananas, blackberries, coconut milk, honey (if using), vanilla extract, and salt.
- Blend until smooth: Pulse and blend on high until the mixture is creamy and smooth. You may need to scrape down the sides of the blender a few times.
- Freeze: Transfer the mixture to a freezer-safe container and smooth out the top. Cover and freeze for 2-3 hours, or until firm.
- Serve: Scoop out the ice cream into bowls or cones, and enjoy immediately. If itโs too hard, let it sit at room temperature for 5-10 minutes to soften.

- For an extra creamy texture, use full-fat coconut milk.
