Description

Instructions

  1. Preheat the Oven: Preheat the oven to 375ยฐF (190ยฐC) and line a muffin tin with paper liners.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Combine Wet Ingredients: In another bowl, mix together the applesauce, vegetable oil, egg, and vanilla extract.
  4. Make Blueberry Filling: In a small saucepan, combine the blueberries, sugar, and lemon juice. Cook over medium heat until the blueberries burst and the mixture thickens.
  5. Assemble the Muffins: Fold the wet ingredients into the dry ingredients until just combined. Fill each muffin cup halfway with batter, add a spoonful of the blueberry filling, then top with more batter.
  6. Bake: Bake the muffins for 18-20 minutes or until a toothpick inserted into the center comes out clean.
