Scale
- 4 slices of artisan bread (such as sourdough or country loaf)
- 4 oz Brie cheese, rinded edges trimmed off and sliced
- 1/2 cup fresh or thawed frozen blueberries
- 2 tablespoons butter, softened
- 1 tablespoon honey or maple syrup (optional, for extra sweetness)
- Small handful of fresh arugula or baby spinach (optional)
Instructions
- Preheat a skillet or griddle over medium heat.
- Spread butter evenly on one side of each bread slice.
- Place two slices, buttered side down, in the skillet.
- Top each with sliced Brie, then scatter blueberries over the cheese. Drizzle honey or maple syrup if using, and add arugula/spinach if desired.
- Cover with remaining bread slices, buttered side up.
- Cook for 3โ4 minutes until the bottom is golden brown and the cheese begins to melt.
- Carefully flip the sandwiches and cook another 3โ4 minutes until the second side is golden and the Brie is fully melted.
- Remove from heat and let rest for 1 minute, then slice in half and serve warm.
Notes
- Use fresh blueberries in season for best flavor; frozen are fine, but thaw and drain excess liquid.
- For extra crunch, add a thin layer of toasted pecans or walnuts.
- To prevent sogginess, blot blueberries if particularly juicy.
- Serve with a simple green salad or cup of tomato soup for a complete meal.
