- 2 slices of bread (sourdough or your favorite)
- 2 large eggs
- 2 slices of bacon (or turkey bacon)
- 2 slices of cheddar cheese (or any cheese you like)
- 1 tbsp butter (for grilling)
- Salt and pepper, to taste
- Optional: 1 tbsp mayonnaise (for spreading on the bread)
Instructions
- Cook the Bacon
- Heat a skillet over medium heat and cook the bacon until crispy. Set aside on a paper towel to drain.
- Scramble the Eggs
- In a small bowl, whisk the eggs with a pinch of salt and pepper.
- Use the same skillet (drain excess grease) and scramble the eggs until just set. Remove from heat.
- Assemble the Sandwich
- Spread butter or mayonnaise on one side of each slice of bread.
- Place a slice of cheese on the unbuttered side of one slice. Add scrambled eggs, bacon, and the second slice of cheese. Top with the second slice of bread, buttered side facing out.
- Grill the Sandwich
- Heat a skillet over medium heat. Place the sandwich in the pan and grill until the bread is golden brown and the cheese is melted, about 2-3 minutes per side.
- Press lightly with a spatula for even grilling.
- Serve
