- 2 cloves garlic, minced
- 1 medium carrot, peeled and chopped
- 1 celery stalk, chopped
- 1 zucchini, chopped
- 1 potato, peeled and diced
- 3 cups vegetable broth
- 1 cup heavy cream (or coconut milk for a dairy-free option)
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried thyme or Italian seasoning
- Fresh parsley, chopped (for garnish)
Instructions
- Sautรฉ the Aromatics:
- In a large pot over medium heat, melt the butter or heat the olive oil.
- Add the chopped onion and sautรฉ for about 3-4 minutes until softened.
- Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
- Add the Vegetables:
- Add the chopped carrot, celery, zucchini, and potato to the pot.
- Stir to combine with the aromatics and cook for about 5 minutes, allowing the vegetables to soften slightly.
- Simmer the Soup:
- Pour in the vegetable broth, then add the salt, black pepper, and dried thyme or Italian seasoning.
- Stir well and bring the mixture to a boil.
- Reduce the heat to medium-low and let the soup simmer uncovered for 15-20 minutes, or until the vegetables are tender.
- Blend the Soup:
- Remove the pot from heat.
- Use an immersion blender to puree the soup until smooth and creamy. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth.
- Add the Cream:
- Return the pot to low heat.
- Stir in the heavy cream (or coconut milk) until fully incorporated.
- Taste and adjust seasoning as needed.
- Serve:
- Ladle the soup into bowls.
- Garnish with freshly chopped parsley.

- Feel free to substitute or add other vegetables such as broccoli, cauliflower, or spinach based on your preference.
- For a vegan version, use olive oil instead of butter and coconut milk in place of heavy cream.
