  • 1/2 cup (100g) light brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (160g) all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (170g) semi-sweet chocolate chips

Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch (20x20cm) baking pan with parchment paper, leaving an overhang for easy removal, and lightly grease it.
  2. Make the Brownie Batter: In a medium mixing bowl, whisk together the melted butter and granulated sugar until smooth. Add eggs and vanilla extract, mixing until fully combined. Sift in cocoa powder, flour, and salt. Stir just until incorporated. Spread the brownie batter evenly into the prepared pan.
  3. Make the Cookie Dough: In a separate bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Mix in the egg and vanilla extract. Add flour, baking soda, and salt; mix until just combined. Fold in the chocolate chips.
  4. Assemble the Brookies: Drop spoonfuls of the cookie dough over the brownie batter in the pan, then gently spread or press to cover as much of the brownie layer as you can. It’s okay if some brownie shows through.
