- 2 cups old-fashioned rolled oats
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon cinnamon (optional)
- 1 cup milk (dairy or non-dairy)
- 1/4 cup maple syrup or honey
- 1 large egg (or flax egg for vegan)
- 1 teaspoon vanilla extract
- 1/4 cup melted coconut oil or butter
- 1/3 cup chocolate chips (plus more for topping)
Instructions
- Preheat ovenย to 350ยฐF (175ยฐC). Lightly grease an 8×8-inch baking dish.
- In a large bowl, mix the oats, cocoa powder, baking powder, salt, and cinnamon.
- In another bowl, whisk together the milk, maple syrup, egg, vanilla, and melted coconut oil.
- Pour the wet ingredients into the dry ingredients and stir until well combined. Fold in the chocolate chips.
- Transfer the mixture to the prepared baking dish and spread it evenly. Sprinkle extra chocolate chips on top.
- Bake forย 25-30 minutes, or until the center is set.
- Let it cool for a few minutes before slicing. Serve warm, optionally with yogurt, nut butter, or fresh berries!
