Ingredients

  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon (optional)
  • 1 cup milk (dairy or non-dairy)
  • 1/4 cup maple syrup or honey
  • 1 large egg (or flax egg for vegan)
  • 1 teaspoon vanilla extract
  • 1/4 cup melted coconut oil or butter
  • 1/3 cup chocolate chips (plus more for topping)

Instructions

  1. Preheat ovenย to 350ยฐF (175ยฐC). Lightly grease an 8×8-inch baking dish.
  2. In a large bowl, mix the oats, cocoa powder, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the milk, maple syrup, egg, vanilla, and melted coconut oil.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined. Fold in the chocolate chips.
  5. Transfer the mixture to the prepared baking dish and spread it evenly. Sprinkle extra chocolate chips on top.
  6. Bake forย 25-30 minutes, or until the center is set.
  7. Let it cool for a few minutes before slicing. Serve warm, optionally with yogurt, nut butter, or fresh berries!
