- 4 boneless, skinless chicken breasts
- 2 medium sweet potatoes, peeled and cubed
- 1/2 cup buffalo sauce
- 1/2 cup shredded cheddar cheese
- 1/4 cup blue cheese crumbles (optional)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1/2 teaspoon dried thyme
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a 9×13-inch casserole dish.
- Toss the cubed sweet potatoes with olive oil, garlic powder, paprika, thyme, salt, and pepper. Spread them out evenly in the prepared casserole dish.
- Roast the sweet potatoes in the preheated oven for 20-25 minutes, or until tender and slightly crispy around the edges.
- While the sweet potatoes are roasting, cook the chicken breasts in a skillet over medium heat until fully cooked, about 6-7 minutes per side. Remove from the skillet, shred the chicken with two forks, and toss it with the buffalo sauce.
- Once the sweet potatoes are done, remove the casserole dish from the oven and spread the buffalo chicken over the roasted sweet potatoes. Sprinkle with shredded cheddar cheese and blue cheese crumbles, if using.
- Return the casserole to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it rest for a few minutes before serving. Garnish with fresh parsley.
