- 4 boneless, skinless chicken breasts
- 3 tablespoons unsalted butter, divided
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon fresh rosemary, chopped
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh parsley, chopped (plus more for garnish)
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1/2 cup chicken broth or white wine (optional)
Instructions
- Prepare the Chicken:ย Pat the chicken breasts dry with paper towels. Season both sides with onion powder, paprika, salt, and pepper.
- Sear the Chicken:ย Heat 1 tablespoon of butter and olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side until golden brown and fully cooked (internal temperature should reach 165ยฐF/74ยฐC). Remove the chicken and set aside.
- Make the Sauce:ย In the same skillet, reduce the heat to medium. Add the remaining butter and minced garlic, stirring frequently for about 1 minute until fragrant.
- Add Herbs and Broth:ย Stir in the rosemary, thyme, and parsley. Pour in chicken broth or white wine (if using), scraping up any browned bits from the bottom of the skillet. Let it simmer for 2-3 minutes until slightly reduced.
- Combine:ย Return the chicken to the skillet, spooning the garlic herb butter sauce over the top. Let it cook for another 2 minutes to absorb the flavors.
- Serve:ย Garnish with fresh parsley and serve immediately with your favorite sides.

- For added richness, stir in a splash of heavy cream to the sauce before adding the chicken back.
