- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups green cabbage, chopped
- 1 can (28 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 4 cups beef broth
- 1 cup white rice, uncooked
- 1 medium carrot, diced
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper
- 1 bay leaf
- 1/2 tsp red pepper flakes (optional, for heat)
- 1 tbsp olive oil
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Brown the beef:ย In a large pot or Dutch oven, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed.
- Sautรฉ the veggies:ย Add the diced onion and carrot to the pot and cook for about 3 minutes until softened. Stir in the garlic and cook for another 30 seconds.
- Add the cabbage:ย Stir in the chopped cabbage and cook for 2โ3 minutes until slightly softened.
- Build the broth:ย Add the diced tomatoes, tomato sauce, beef broth, tomato paste, Worcestershire sauce, paprika, oregano, salt, black pepper, red pepper flakes, and the bay leaf. Stir well to combine.
- Simmer:ย Bring the soup to a gentle boil, then reduce the heat to low. Cover and let it simmer for 20 minutes, stirring occasionally.
- Add the rice:ย Stir in the uncooked rice, cover, and continue simmering for another 15โ20 minutes, or until the rice is tender.
- Final touches:ย Remove the bay leaf. Taste and adjust seasoning as needed.
- Serve:ย Ladle into bowls and garnish with fresh parsley. Serve hot!
