Instructions

  1. Season the chicken breasts with Cajun seasoning, paprika, salt, and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the sliced bell peppers, onion, and garlic. Cook, stirring occasionally, for about 5-7 minutes, or until the vegetables are tender.
  4. Pour in the chicken broth and stir to deglaze the skillet, scraping up any brown bits from the bottom of the pan.
  5. Return the chicken to the skillet and cook for an additional 2-3 minutes, allowing the flavors to combine.
