- 4 boneless, skinless chicken breasts
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- 1/2 cup chicken broth
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with Cajun seasoning, paprika, salt, and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove the chicken from the skillet and set aside.
- In the same skillet, add the sliced bell peppers, onion, and garlic. Cook, stirring occasionally, for about 5-7 minutes, or until the vegetables are tender.
- Pour in the chicken broth and stir to deglaze the skillet, scraping up any brown bits from the bottom of the pan.
- Return the chicken to the skillet and cook for an additional 2-3 minutes, allowing the flavors to combine.
- Garnish with fresh parsley and serve hot.
Notes
- For a spicier version, add a pinch of cayenne pepper or red pepper flakes to the seasoning mix.
- Serve with rice or a side salad to complete the meal.
