Instructions

  1. Prepare the Crust: Preheat the oven to 325ยฐF (163ยฐC). In a bowl, combine graham cracker crumbs and melted butter. Stir until evenly moist. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then allow to cool.
  2. Make the Apple Filling: In a skillet over medium heat, melt butter. Add diced apples, brown sugar, cinnamon, and nutmeg. Cook, stirring occasionally, until apples are tender and mixture is thickened (about 6-8 minutes). Set aside to cool slightly.
  3. Make the Cheesecake Filling: In a large bowl, beat softened cream cheese until smooth and creamy. Add sugar and beat until combined. Add eggs one at a time, beating well after each addition. Mix in vanilla extract and sour cream until just blended.
