Description

Cauliflower Cheese is a comforting British classic featuring tender cauliflower florets smothered in a rich, creamy cheese sauce and baked until golden and bubbly.


Ingredients

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1 teaspoon Dijon mustard
  • 1 1/2 cups grated cheddar cheese
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional, for topping)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil and cook the cauliflower florets for 5–7 minutes until just tender. Drain and set aside.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute to form a roux.
  4. Gradually whisk in the milk, ensuring no lumps form. Cook and stir until the sauce thickens, about 5 minutes.
  5. Stir in the mustard and cheddar cheese until melted and smooth. Season with salt and pepper to taste.
  6. Place the cauliflower in a baking dish and pour the cheese sauce evenly over it.
  7. Sprinkle with Parmesan cheese if using.
  8. Bake for 20–25 minutes or until golden and bubbling.
