- 1 large cauliflower, cut into florets
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- 1 teaspoon Dijon mustard
- 1 1/2 cups grated cheddar cheese
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional, for topping)
Instructions
- Preheat the oven to 375°F (190°C).
- Bring a large pot of salted water to a boil and cook the cauliflower florets for 5–7 minutes until just tender. Drain and set aside.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute to form a roux.
- Gradually whisk in the milk, ensuring no lumps form. Cook and stir until the sauce thickens, about 5 minutes.
- Stir in the mustard and cheddar cheese until melted and smooth. Season with salt and pepper to taste.
- Place the cauliflower in a baking dish and pour the cheese sauce evenly over it.
- Sprinkle with Parmesan cheese if using.
- Bake for 20–25 minutes or until golden and bubbling.
- Serve hot as a side dish or main course.

- For extra richness, add a splash of cream to the cheese sauce.
- Use a mix of cheeses like Gruyère or mozzarella for a different flavor profile.
