Description

This easy one-pot pasta combines spaghetti with fresh tomatoes, basil, and a hint of garlic, all cooked together for a quick and flavorful meal.


Ingredients

  • 12 ounces cherry tomatoes, halved
  • 4 cloves garlic, thinly sliced
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons extra virgin olive oil
  • 4 1/2 cups water
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup fresh basil leaves, chopped
  • Grated Parmesan cheese, for serving

Instructions

  • In a large, straight-sided skillet or pot, combine the spaghetti, cherry tomatoes, garlic, red pepper flakes (if using), olive oil, water, salt, and black pepper.
  • Bring the mixture to a boil over high heat.
  • Once boiling, reduce the heat slightly and continue to cook, stirring frequently with tongs to prevent sticking, until the pasta is al dente and most of the liquid has evaporated, about 8-10 minutes.
  • Remove from heat and stir in the fresh basil.
  • Serve immediately, topped with grated Parmesan cheese.

Notes

  • Feel free to add other vegetables you have on hand, such as spinach, zucchini, or mushrooms, to make the dish more hearty.
