Description

These mini cheese ball bites are the perfect party appetizer! Creamy, flavorful, and coated with crunchy toppings, theyโ€™re easy to make and fun to eat. Serve them with crackers, veggies, or enjoy them on their own as a savory snack.


Ingredients

  • 8 oz (1 package) cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 4 oz goat cheese, softened
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika (optional)
  • 1 tbsp fresh chives, finely chopped
  • 1/4 cup chopped pecans
  • 1/4 cup cooked bacon, crumbled
  • 1/4 cup dried cranberries, finely chopped (optional)
  • Pretzel sticks (for serving, optional)

Instructions

  1. In a medium bowl, combine the cream cheese, cheddar cheese, goat cheese, garlic powder, onion powder, black pepper, and smoked paprika. Mix until smooth and well combined.
  2. Stir in the chopped chives, reserving a little for garnish if desired.
  3. Using a small cookie scoop or spoon, portion out the cheese mixture and roll it into bite-sized balls (about 1 inch in diameter).
  4. Prepare separate bowls with chopped pecans, crumbled bacon, and dried cranberries. Roll each cheese ball in your desired coating until fully covered.
  5. Refrigerate the cheese balls for at least 30 minutes to firm up.
  6. Just before serving, insert a pretzel stick into each cheese ball for easy handling.
  7. Arrange on a platter, sprinkle with extra chives if desired, and serve chilled.

Notes

  • You can swap out the coatings with crushed nuts, herbs, or even everything bagel seasoning.
  • To make ahead, prepare and refrigerate up to 2 days in advance. Add pretzel sticks just before serving to keep them crisp.
  • If you prefer a milder flavor, skip the goat cheese and use more cream cheese instead.
