Scale
- 8 oz (1 package) cream cheese, softened
- 1 cup sharp cheddar cheese, shredded
- 4 oz goat cheese, softened
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp black pepper
- 1/4 tsp smoked paprika (optional)
- 1 tbsp fresh chives, finely chopped
- 1/4 cup chopped pecans
- 1/4 cup cooked bacon, crumbled
- 1/4 cup dried cranberries, finely chopped (optional)
- Pretzel sticks (for serving, optional)
Instructions
- In a medium bowl, combine the cream cheese, cheddar cheese, goat cheese, garlic powder, onion powder, black pepper, and smoked paprika. Mix until smooth and well combined.
- Stir in the chopped chives, reserving a little for garnish if desired.
- Using a small cookie scoop or spoon, portion out the cheese mixture and roll it into bite-sized balls (about 1 inch in diameter).
- Prepare separate bowls with chopped pecans, crumbled bacon, and dried cranberries. Roll each cheese ball in your desired coating until fully covered.
- Refrigerate the cheese balls for at least 30 minutes to firm up.
- Just before serving, insert a pretzel stick into each cheese ball for easy handling.
- Arrange on a platter, sprinkle with extra chives if desired, and serve chilled.
Notes
- You can swap out the coatings with crushed nuts, herbs, or even everything bagel seasoning.
- To make ahead, prepare and refrigerate up to 2 days in advance. Add pretzel sticks just before serving to keep them crisp.
- If you prefer a milder flavor, skip the goat cheese and use more cream cheese instead.
