Main Ingredients
- 1 pound ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 medium carrot, peeled and diced
- 1 celery rib, diced
- 4 cups beef broth
- 2 cups milk
- 1 (14-ounce) can diced tomatoes, undrained
- 2 cups elbow macaroni, uncooked
Seasonings
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1/2 teaspoon dried parsley
Finishing Touches
- 2 cups shredded sharp cheddar cheese
- 2 tablespoons cream cheese
- 2 tablespoons ketchup (optional, for extra cheeseburger flavor)
- Chopped pickles (optional for garnish)
Instructions
- Brown the Beef
In a large soup pot over medium-high heat, add the ground beef and cook until it begins to brown, breaking it up with a spoon. Add the diced onion, carrot, and celery, and sautรฉ until the vegetables are softened and the beef is cooked through (about 5-7 minutes). Add the minced garlic and sautรฉ for 1 minute until fragrant. - Add Broth and Seasonings
Pour in the beef broth, can of diced tomatoes (with juices), salt, pepper, paprika, and dried parsley. Stir to combine, scraping up any browned bits from the bottom of the pot. - Add Pasta & Simmer
Add the uncooked elbow macaroni. Bring the mixture to a gentle boil, then reduce the heat to a simmer. Cook uncovered, stirring occasionally, for 8-10 minutes or until the pasta is tender. - Make it Creamy
Reduce the heat to low. Stir in the milk, shredded cheddar cheese, and cream cheese. Continue stirring until the cheese is completely melted and the soup is creamy. If you like, add the ketchup at this point for extra cheeseburger flavor. - Serve
Ladle the soup into bowls and garnish with chopped pickles or extra cheese if desired. Serve hot and enjoy!
Notes
- Substitute ground turkey or chicken for ground beef if preferred.
- For a lighter version, use low-fat milk and reduced-fat cheese.
- This soup thickens as it cools due to the pasta; add an extra splash of broth if reheating leftovers.
- Top with other classic cheeseburger garnishes, like chopped tomatoes, crispy bacon, or a dollop of mustard.
