- 1 lb ground beef
- 1/2 cup finely chopped onion (optional)
- 1 tsp salt
- 1 1/2 cups shredded sharp cheddar cheese
- 1/2 cup sliced pickles
- 4 large flour tortillas
- 1 tbsp butter or oil for cooking
- 1/4 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tbsp sweet relish
Instructions
- In a skillet over medium heat, cook ground beef with salt and onion (if using) until browned and fully cooked. Drain excess grease.
- In a small bowl, mix mayonnaise, ketchup, mustard, and relish to make the burger sauce.
- Lay out tortillas. Spread sauce over half of each. Top with cheddar cheese, cooked beef, pickles, and a little more cheese. Fold tortillas in half.
- Heat butter or oil in a skillet over medium heat. Cook each quesadilla 2โ3 minutes per side until golden and the cheese is melted.
- Let rest for 1 minute, then slice into wedges and serve warm with extra burger sauce.
Notes
- Do not overfill the quesadillas to make flipping easier.
- Use low heat for even cheese melting and crispy tortillas.
- Make burger sauce ahead of timeโit stores well for a week in the fridge.
- Use a spatula to gently press quesadillas for better crisp and seal.
