  • For the burgers:
    • 1 lb ground beef (80/20 for best flavor)
    • 4 hamburger buns
    • 4 slices of cheddar cheese (or your preferred cheese)
    • Salt and pepper to taste
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
  • For the veggies and potatoes:
    • 2 large potatoes, thinly sliced
    • 1 bell pepper, sliced
    • 1 small zucchini, sliced
    • 1 small onion, sliced
    • 2 tablespoons olive oil
    • 1 teaspoon Italian seasoning
    • Salt and pepper to taste

Instructions

  1. Preheat and Prep:
    • Preheat your oven to 400ยฐF (200ยฐC), or preheat a grill to medium heat.
  2. Form the Patties:
    • In a bowl, mix the ground beef with salt, pepper, garlic powder, and onion powder. Form the mixture into four even patties.
  3. Prepare the Veggies and Potatoes:
    • In another bowl, toss the potato slices, bell pepper, zucchini, and onion with olive oil, Italian seasoning, salt, and pepper.
  4. Assemble Foil Packs:
    • Lay out 4 large pieces of aluminum foil. Divide the seasoned veggies and potatoes among the foil sheets, spreading them out in the center.
    • Place one beef patty on top of the veggies in each foil pack.
  5. Seal and Cook:
    • Fold the foil around the burger and veggies, sealing the edges tightly to create a pouch.
    • Place the foil packs on a baking sheet (if using an oven) or directly on the grill grates. Cook for 25-30 minutes in the oven, or 20-25 minutes on the grill, until the burgers are fully cooked (internal temperature reaches 160ยฐF) and the potatoes are tender.
  6. Add Cheese:
    • Open the foil packs and place a slice of cheese on each burger. Let it melt for a couple of minutes.
  7. Serve:
    • Remove the foil packs from the heat and carefully open them. Place each cheeseburger on a bun and serve alongside the roasted veggies and potatoes.

  • You can customize the vegetables with your favorites, like mushrooms, cherry tomatoes, or carrots.
  • Swap out the cheese for your preferred varietyโ€”Swiss, American, or pepper jack all work well.
