Instructions

  1. Brown the Beef: In a large, ovenproof skillet over medium-high heat, add the ground beef. Cook, stirring frequently and breaking it up with a spoon, until browned and no longer pink, about 5 minutes. Drain excess fat if needed.
  2. Sautรฉ Aromatics: Add diced onion to the skillet with the beef. Cook until softened, about 3 minutes. Stir in minced garlic, cumin, and chili powder, and cook for another 1 minute until fragrant.
  3. Add Liquids and Tortellini: Pour in the enchilada sauce and broth, scraping the bottom to release any browned bits. Bring to a simmer, then add the cheese tortellini. Stir to coat the pasta evenly.
