- 1 (15 oz/425g) can enchilada sauce (red or green)
- 1 cup (240ml) beef or chicken broth

- 2 cloves garlic, minced
Spices & Seasonings
- 1 tsp ground cumin
- 1/2 tsp chili powder (optional, for heat)
- Salt and pepper, to taste
Cheese & Toppings
- 1 1/2 cups (180g) shredded Mexican blend cheese (or cheddar)
- Chopped fresh cilantro, for serving
- Diced avocado or jalapeรฑos, optional for serving
Instructions
- Brown the Beef: In a large, ovenproof skillet over medium-high heat, add the ground beef. Cook, stirring frequently and breaking it up with a spoon, until browned and no longer pink, about 5 minutes. Drain excess fat if needed.
- Sautรฉ Aromatics: Add diced onion to the skillet with the beef. Cook until softened, about 3 minutes. Stir in minced garlic, cumin, and chili powder, and cook for another 1 minute until fragrant.
- Add Liquids and Tortellini: Pour in the enchilada sauce and broth, scraping the bottom to release any browned bits. Bring to a simmer, then add the cheese tortellini. Stir to coat the pasta evenly.
- Cook the Tortellini: Cover and simmer over medium-low heat for 4-5 minutes, or until the tortellini are tender and heated through, stirring once or twice. Uncover and simmer another minute if sauce needs thickening.
- Add Cheese: Sprinkle shredded cheese evenly over the skillet. Cover for 2-3 minutes or until cheese is melted. For a golden top, broil uncovered for 1-2 minutes until bubbly, if desired.
- Finish and Serve: Remove from heat. Garnish with cilantro, and, if using, diced avocado or jalapeรฑos. Serve hot straight from the skillet.
Notes
- Use ground turkey or chicken for a leaner protein option.
- Swap cheese tortellini for beef or spinach tortellini for flavor variety.
- Customize toppings with sour cream, sliced olives, or green onions.
- This dish is best enjoyed fresh but can be reheated in the microwave.
