  • 1 1/2 lbs ground beef
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 1/2 cup ketchup

For the Topping:

  • 3 cups mashed potatoes (homemade or store-bought)
  • 1 cup shredded cheddar cheese
  • 1/2 cup crumbled cooked bacon
  • 2 tbsp chopped green onions (optional, for garnish)

Instructions

  1. Prepare the Meatloaf Base:
Preheat your oven to 375ยฐF (190ยฐC). Grease a 9ร—13-inch baking dish.
In a large bowl, combine the ground beef, breadcrumbs, eggs, milk, onion, garlic, salt, pepper, Worcestershire sauce, and ketchup. Mix until well combined.
Press the mixture evenly into the prepared baking dish.
  2. Bake the Meatloaf:
Bake in the preheated oven for 20 minutes or until the meat begins to firm up. Remove from the oven and carefully drain any excess grease.
  3. Add the Topping:
Spread the mashed potatoes evenly over the baked meatloaf layer. Sprinkle the shredded cheddar cheese on top, followed by the crumbled bacon.
  4. Bake Until Golden:
Return the dish to the oven and bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  5. Garnish and Serve:
Remove from the oven and let cool for 5 minutes. Garnish with chopped green onions if desired. Slice and serve warm.

Notes

  • You can use store-bought mashed potatoes for convenience or whip up a batch of your favorite homemade version.
  • Swap cheddar for any cheese of your choice, such as mozzarella or pepper jack, for a different flavor.
